Ingredients

  • 4 medium Russet potatoes
  • 4 tablespoons Olive oil

  • 1 teaspoon Smoked paprika
  • 1 small, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 cup Crushed tomatoes
  • 0.5 teaspoon Red chili flakes
  • 0.5 teaspoon Sugar
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes, approximately 1-inch.

Step 2

Place the potato cubes in a pot of cold salted water and bring to a boil. Cook for 5-7 minutes, or until slightly tender but not fully cooked. Drain and set aside.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the partially cooked potatoes in a single layer and sprinkle with a pinch of salt and the smoked paprika.

Pan-fry the potatoes for 10-12 minutes, turning occasionally, until they are golden brown and crispy on all sides. Remove from the skillet and keep warm.
