Ingredients

  • 4 pieces Medium potatoes
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro leaves, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Wash the potatoes thoroughly and peel them if desired. Cut them into 1-inch cubes.

Step 2

Boil the potato cubes in salted water for 8-10 minutes, or until they are just tender but still firm. Drain and set aside.

Step 3

Heat the vegetable oil in a large pan or skillet over medium heat.

Step 4

Add the cumin seeds and mustard seeds to the hot oil. Stir and let them sizzle for about 1 minute, or until they start to pop.

Step 5

Add the turmeric powder, coriander powder, and red chili powder to the pan. Stir quickly to combine the spices with the oil.

Step 6

Add the boiled potato cubes to the pan and toss them gently to coat them with the spices.

Step 7

Sprinkle salt over the potatoes and continue to cook for 8-10 minutes, stirring occasionally to ensure even browning without breaking the cubes.

Step 8

Add the garam masala and stir gently to incorporate. Cook for another 2 minutes to blend the flavors.

Step 9

Turn off the heat and add the freshly chopped cilantro leaves and a squeeze of lemon juice.

Step 10

Mix lightly and serve immediately as a side dish or pair it with naan, roti, or rice.
