Ingredients

  • 4 medium-sized Potatoes
  • 2 teaspoons Garam masala
  • 3 medium-sized Tomatoes
  • 2 tablespoons Cooking oil
  • 1 medium-sized Onion
  • 3 cloves Garlic
  • 1 teaspoon Fresh ginger
  • 1 Green chili
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoons Red chili powder
  • 1 teaspoon Salt
  • 0.5 cups Water
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes. Rinse them in cold water and set aside.

Step 2

Finely chop the onion, garlic, ginger, green chili, and tomatoes. Set them aside in separate bowls.

Step 3

Heat the cooking oil in a large skillet or wok over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until aromatic.

Step 4

Add the chopped onion to the skillet and sauté for 3–4 minutes until golden brown.

Step 5

Stir in the garlic, ginger, and green chili. Cook for another 1 minute until fragrant.

Step 6

Add the chopped tomatoes, turmeric powder, coriander powder, garam masala, red chili powder, and salt. Stir well and let the mixture cook for 5–7 minutes until the tomatoes break down and form a thick paste.

Step 7

Add the potato cubes to the skillet and mix well to coat them in the tomato and spice mixture.

Step 8

Pour in the water, cover the skillet with a lid, and lower the heat to medium-low. Let the potatoes simmer for 15–20 minutes, stirring occasionally, until they are tender and the sauce has thickened.

Step 9

Taste and adjust salt or spice levels if needed. Turn off the heat and garnish with freshly chopped cilantro.

Step 10

Serve hot with rice, naan, or flatbread. Enjoy your flavorful Potatoes with Garam Masala and Spicy Tomato!
