Ingredients

  • 4 medium Potatoes
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 3 units Garlic cloves
  • 1 cup Tomato puree
  • 0.5 cup Heavy cream
  • 0.5 cup Vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 0.5 teaspoon Dried oregano
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Grated Parmesan cheese (optional)

Directions

Step 1

Wash the potatoes thoroughly and peel them if desired. Cut them into 1-inch cubes for even cooking.

Step 2

Bring a pot of salted water to a boil. Add the potato cubes and cook them for 10 minutes or until just fork-tender. Drain and set aside.

Step 3

While the potatoes are boiling, peel and finely chop the onion and garlic cloves.

Step 4

Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Step 5

Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to prevent burning.

Step 6

Stir in the tomato puree, vegetable broth, salt, black pepper, paprika, and dried oregano. Mix well and bring the sauce to a gentle simmer.

Step 7

Lower the heat to medium-low and stir in the heavy cream. Let the sauce cook for 5-7 minutes, stirring occasionally, until it thickens slightly.

Step 8

Add the cooked potatoes to the sauce, stirring gently to ensure they are well coated without breaking apart.

Step 9

Taste and adjust seasoning as needed. Sprinkle fresh parsley over the dish before serving.

Step 10

For added flavor, garnish with grated Parmesan cheese, if desired. Serve warm as a side dish or light meal.
