Ingredients

  • 6 medium Yukon Gold potatoes
  • 8 ounces Queso fresco (fresh cheese)
  • 2 tablespoons Aji amarillo paste (yellow chili paste)
  • 1 cup Evaporated milk
  • 6 pieces Saltine crackers
  • 2 tablespoons Vegetable oil
  • 1 clove Garlic
  • 4 whole Lettuce leaves
  • 2 large Hard-boiled eggs
  • 8 whole Black olives, pitted
  • 0.5 teaspoon Salt
  • 8 cups Water

Directions

Step 1

Wash the potatoes thoroughly and place them in a large pot. Add 8 cups of water and a pinch of salt, then boil the potatoes for 25-30 minutes until they are tender when pierced with a fork.

Step 2

While the potatoes are boiling, prepare the Huancaína sauce. In a blender, combine the queso fresco, aji amarillo paste, evaporated milk, saltine crackers, vegetable oil, garlic clove, and 0.5 teaspoons of salt. Blend until smooth and creamy. Adjust the thickness by adding more evaporated milk if needed.

Step 3

Once the potatoes are cooked, drain them and allow them to cool slightly. Peel the potatoes and slice them into thick rounds.

Step 4

Arrange the lettuce leaves on a serving platter. Place the potato slices on top of the lettuce.

Step 5

Pour the Huancaína sauce generously over the potatoes, ensuring they are well coated.

Step 6

Garnish the dish with wedges of hard-boiled eggs and black olives.

Step 7

Serve chilled or at room temperature. Enjoy your Papas a la Huancaína as a delightful appetizer or side dish.
