Ingredients

  • 6 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1.5 cups Sour cream
  • 2 cups Shredded cheddar cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 stalks Green onions
  • 1 cup Panko breadcrumbs
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and peel the potatoes, then cut them into 1-inch cubes.

Step 3

Bring a large pot of salted water to a boil. Add the potato cubes and boil for 10-12 minutes, or until fork-tender. Drain and set aside.

Step 4

In a large mixing bowl, mash the potatoes using a potato masher or fork.

Step 5

While the potatoes are still warm, add the butter, sour cream, 1 1/2 cups of shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until smooth and creamy.

Chop the green onions finely and fold in three-quarters of them, reserving some for garnish.

Step 7

Transfer the potato mixture to a greased 9x13-inch baking dish, spreading it evenly.

In a small bowl, mix the panko breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumb mixture over the potatoes, then top with the remaining 1/2 cup of shredded cheddar cheese.

Bake in the preheated oven for 25 minutes, or until the top is golden brown and the cheese is melted.

Remove from the oven and let cool for 5 minutes. Sprinkle the reserved green onions on top before serving.
