Ingredients

  • 3 large Russet potatoes
  • 450 grams Shrimp, peeled and deveined
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Butter
  • 2 tablespoons Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Parsley, chopped
  • 4 wedges Lemon wedges (optional, for serving)

Directions

Step 1

Peel the potatoes and cut them into 1-inch cubes. Rinse them under cold water to remove excess starch, then pat them dry with a kitchen towel.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Once the butter melts, add the potato cubes in a single layer. Cook for 10-12 minutes, flipping occasionally, until the potatoes are golden brown and tender. Remove the potatoes from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Add the minced garlic and sauté for 30 seconds, being careful not to burn it.

Step 4

Add the shrimp to the skillet. Sprinkle with paprika, dried thyme, salt, and ground black pepper. Cook for 3-4 minutes, stirring occasionally, until the shrimp are pink and fully cooked.

Step 5

Return the cooked potatoes to the skillet with the shrimp. Toss everything together gently to combine, ensuring the potatoes are coated in the garlic butter sauce.

Step 6

Sprinkle the chopped parsley over the dish and give it one final stir.

Step 7

Serve immediately with optional lemon wedges on the side for added brightness.
