  • 0.5 cup Shredded Parmesan cheese
  • 4 ounces Pancetta, diced
  • 0.75 cup Panko breadcrumbs
  • 1 tablespoon Olive oil
  • 2 tablespoons Chopped fresh parsley (optional)

Directions

Step 1

Peel and chop the russet potatoes into even chunks. Place them in a large pot, cover with water, and bring to a boil.

Reduce the heat to a simmer and cook the potatoes for 15-20 minutes, or until fork-tender. Drain thoroughly.
