Ingredients

  • 2 pounds Yukon Gold potatoes
  • 3 tablespoons Unsalted butter
  • 1.5 cups Heavy cream
  • 2 tablespoons Dijon mustard
  • 2 Garlic cloves, minced
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper, freshly ground
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Wash, peel (optional), and cut the Yukon Gold potatoes into 1-inch cubes.

Step 2

Place the potatoes in a large pot and add enough water to cover them. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat. Reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 4

While the potatoes cook, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 5

Stir in the heavy cream and Dijon mustard to the butter and garlic mixture. Reduce heat to low and let it warm through, stirring occasionally. Season the sauce with 1/2 teaspoon of salt and freshly ground black pepper. Keep warm.

Step 6

Drain the cooked potatoes and return them to the pot. Use a potato masher or a hand mixer to mash the potatoes to your desired consistency.

Step 7

Gradually pour the warm cream and mustard mixture into the mashed potatoes, mixing well to combine. Adjust the seasoning with additional salt and pepper, if needed.

Step 8

Fold in the grated Parmesan cheese until fully incorporated and creamy.

Step 9

Transfer the Potatoes Poupon to a serving dish and garnish with chopped fresh parsley, if desired.

Step 10

Serve hot and enjoy!
