Ingredients

  • 4 medium Russet potatoes
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 medium Yellow onion
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional for garnish)

Directions

Step 1

Peel the russet potatoes and cut them into small, evenly-sized cubes (about ½ inch).

Step 2

Place the diced potatoes in a bowl of cold water to rinse off excess starch. Let them sit for 5 minutes, then drain and pat dry with a clean kitchen towel.

Step 3

Dice the red bell pepper, green bell pepper, and yellow onion into small, uniform pieces.

Step 4

Heat a large skillet over medium heat and add 2 tablespoons of unsalted butter and 2 tablespoons of olive oil. Allow the butter to melt and foam slightly.

Step 5

Add the diced potatoes to the skillet in a single layer. Cook for 8-10 minutes, stirring occasionally, until they start to turn golden brown and crispy.

Step 6

Push the potatoes to one side of the skillet and add the remaining 1 tablespoon of butter. Add the diced bell peppers and onion to the empty space and sauté for 5-7 minutes until the vegetables are softened.

Step 7

Sprinkle garlic powder, paprika, salt, and black pepper evenly over the potato and vegetable mixture. Toss everything together to combine and cook for another 3-5 minutes to allow the flavors to meld.

Step 8

Taste and adjust seasoning if needed.

Step 9

Remove from heat and garnish with freshly chopped parsley, if desired.

Step 10

Serve hot as a side dish alongside eggs, bacon, or your favorite main course.
