Ingredients

  • 4 medium Russet potatoes
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 medium Yellow onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika

Directions

Step 1

Peel the russet potatoes and cut them into 1/2-inch cubes. Rinse them under cold water to remove excess starch, then pat them dry with a clean kitchen towel.

Step 2

Dice the red and green bell peppers and the yellow onion into small, uniform pieces, about the same size as the potato cubes.

Step 3

Heat a large skillet over medium-high heat and add the olive oil and butter, allowing the butter to melt completely.

Step 4

Once the butter is melted and begins to sizzle, add the potatoes to the skillet in a single layer. Cook the potatoes without stirring for about 5 minutes, allowing them to brown on one side.

Step 5

Stir the potatoes, then add the diced bell peppers and onion. Continue to cook, stirring occasionally, for about 15-20 minutes or until the potatoes are tender and nicely browned, and the peppers and onions are softened.

Step 6

Season the mixture with salt, black pepper, garlic powder, and paprika. Stir well to evenly distribute the seasonings.

Step 7

Taste and adjust the seasoning if necessary. Continue to cook for another 2-3 minutes to allow the flavors to meld together.

Step 8

Remove the skillet from the heat and serve the Potatoes O'Brien hot, garnished with chopped parsley if desired.
