Ingredients

  • 2 pounds Russet potatoes
  • 2 medium Yellow onion
  • 6 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 2 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and chop the potatoes into evenly sized chunks, roughly 2 inches wide. Place them in a large pot and cover with cold water.

Step 2

Add 1 teaspoon of salt to the pot and bring to a boil over medium-high heat. Reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.

While the potatoes are cooking, peel and thinly slice the onions into half-moons.
