  • 2 pounds Yukon gold potatoes
  • 2 medium Yellow onion
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley

  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Peel the Yukon gold potatoes and slice them into 1/4-inch thick rounds. Rinse them under cold water to remove excess starch, and pat them dry with a clean kitchen towel.

Step 2

Peel and thinly slice the yellow onions into half-moon shapes.

Step 3

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 10–12 minutes, or until they are golden brown and caramelized. Remove the onions from the skillet and set them aside.
