Ingredients

  • 500 grams Potatoes
  • 2 tablespoons Olive oil
  • 4 tablespoons Tahini
  • 2 tablespoons Lemon juice
  • 2 units Garlic cloves
  • 4 tablespoons Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoon Ground paprika (optional, for garnish)

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes.

Step 2

In a medium pot, bring water to a boil. Add a pinch of salt and the potato cubes, boiling them for 8-10 minutes or until they are fork-tender. Be careful not to overcook.

Drain the potatoes and set them aside to cool slightly.
