Ingredients

  • 6 medium Yukon Gold potatoes
  • 3 tablespoons Ají amarillo paste
  • 8 ounces Queso fresco (fresh cheese)
  • 0.75 cup Evaporated milk
  • 6 crackers Saltine crackers
  • 0.25 cup Vegetable oil
  • 1 large Garlic clove
  • 1 teaspoon Salt
  • 2 Hard-boiled eggs
  • 8 Black olives
  • 4 Lettuce leaves

Directions

Step 1

Place the potatoes in a large pot of salted water and bring to a boil. Cook for about 15–20 minutes, or until the potatoes are tender when pierced with a fork. Drain, allow to cool slightly, and peel. Set aside.

Step 2

In a blender, combine the ají amarillo paste, queso fresco, evaporated milk, saltine crackers, vegetable oil, garlic, and salt. Blend until smooth and creamy. If the sauce is too thick, add a little more evaporated milk, 1 tablespoon at a time, until desired consistency is reached.
