Ingredients

  • 4 medium Russet potatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 12 ounces Smoked sausage
  • 1 medium Yellow onion
  • 1 medium Red bell pepper
  • 3 cloves Garlic
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and dice the potatoes into bite-sized cubes. Rinse them under cold water to remove excess starch, then pat dry with a towel.

Step 2

Heat 1 tablespoon of olive oil and the butter in a large skillet over medium heat.

Step 3

Add the diced potatoes to the skillet, spreading them out in an even layer. Cook for 8–10 minutes, stirring occasionally, until the potatoes are golden brown and cooked through. Remove the potatoes from the skillet and set aside.

Step 4

Slice the smoked sausage into 1/4-inch rounds. Add the remaining tablespoon of olive oil to the skillet and cook the sausage slices for 3–4 minutes, or until they are browned on both sides. Remove and set aside with the potatoes.

Dice the onion and bell pepper into small pieces. Mince the garlic cloves.
