  • 2 pieces Chicken breasts
  • 4 medium Potatoes
  • 4 tablespoons Butter
  • 0.5 cup Milk
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 medium Onion
  • 2 medium Carrots
  • 2 Celery stalks
  • 2 tablespoons All-purpose flour
  • 1.5 cups Chicken broth
  • 1 cup Frozen peas
  • 1 cup Cheddar cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and quarter the potatoes. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

Step 3

While the potatoes cook, heat the olive oil in a large skillet over medium heat. Dice the chicken breasts into bite-sized pieces and cook until no longer pink, about 6-8 minutes. Remove and set aside.

Step 4

In the same skillet, add the diced onion, sliced carrots, and chopped celery. Sauté until the vegetables are softened, about 5 minutes.
