Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 2 cloves garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup frozen peas
  • 4 medium russet potatoes, peeled and chopped
  • 3 tbsp butter
  • 0.5 cup milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, heat the olive oil and add the diced onion and carrot. Cook for 5 minutes, stirring occasionally, until softened.

Step 3

Add the minced garlic and cook for an additional minute until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef. Cook until the beef is browned, breaking it apart with a spoon as it cooks.

Step 5

Stir in the tomato paste, beef broth, and Worcestershire sauce. Simmer for 5 minutes, allowing the flavors to meld together.

Step 6

Stir in the frozen peas and season the mixture with salt and pepper to taste. Transfer the beef mixture to an 8x8-inch casserole dish and spread it evenly.

Step 7

While the beef is cooking, place the chopped potatoes in a medium pot and cover them with cold water. Add a pinch of salt and bring to a boil over high heat.

Step 8

Reduce the heat to medium and simmer the potatoes for 15 minutes, or until tender when pierced with a fork. Drain the potatoes and return them to the pot.

Step 9

Add the butter, milk, salt, and pepper to the pot with the potatoes. Mash until smooth and creamy.

Step 10

Spread the mashed potatoes evenly over the beef mixture in the casserole dish, smoothing with a spatula.

Step 11

Sprinkle the shredded cheddar cheese evenly over the top of the mashed potatoes.

Step 12

Bake the casserole in the preheated oven for 30 minutes, or until the cheese is melted and golden brown.

Step 13

Let the casserole rest for 5 minutes before serving. Enjoy!
