  • 3 medium tomatoes
  • 1.5 cups heavy cream
  • 0.5 cups grated Parmesan cheese
  • 1 cups shredded mozzarella cheese
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon butter

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish with butter.

Step 2

Wash the potatoes and tomatoes. Thinly slice the potatoes and tomatoes into even rounds, about 1/8-inch thick. Use a mandoline slicer if available for uniform slices.

Peel and finely mince the garlic.

In a small saucepan, heat the olive oil over low heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned. Remove from heat.
