Ingredients

  • 500 g Baby potatoes
  • 250 g Cherry tomatoes
  • 1 large Red onion
  • 150 g Green beans
  • 100 g Gruyere cheese
  • 50 g Olives
  • 3 tbsp Extra-virgin olive oil
  • 1 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove Garlic
  • 10 g Fresh parsley
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Place the baby potatoes in a pot of salted water. Bring to a boil, reduce heat, and simmer for 12-15 minutes until tender. Drain and allow them to cool slightly before cutting them into halves.

Step 2

While the potatoes are cooking, trim the ends of the green beans. Bring another pot of water to a boil, blanch the green beans for 2-3 minutes until bright green, then transfer them to an ice bath to stop the cooking. Drain and set aside.

Step 3

Thinly slice the red onion and halve the cherry tomatoes. Grate or thinly slice the Gruyere cheese.

Step 4

In a small bowl, combine the olive oil, red wine vinegar, Dijon mustard, and minced garlic. Whisk until emulsified. Add salt and black pepper to taste.
