Ingredients

  • 2 medium Potatoes
  • 1 large Egg
  • 2 tablespoons All-purpose flour
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Garlic powder
  • 0.25 teaspoons Ground paprika
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Chopped parsley
  • 0 to taste Optional toppings (avocado, cheese, fried egg, etc.)

Directions

Step 1

Peel the potatoes and grate them using a box grater. Place the grated potatoes into a clean kitchen towel and squeeze out as much moisture as possible.

Step 2

In a medium bowl, combine the grated potatoes, egg, all-purpose flour, salt, black pepper, garlic powder, paprika, and chopped parsley. Mix well to form a batter-like consistency.

Step 3

Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium heat.

Scoop about 1/4 cup of the potato mixture and place it into the skillet. Flatten it slightly with a spatula to form a toast-shaped rectangle, about 1/2 inch thick.
