Ingredients

  • 4 large Russet potatoes
  • 6 tablespoons Unsalted butter
  • 1 large Yellow onion
  • 3 Celery stalks
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Dried sage
  • 1 teaspoon Dried thyme
  • 0.5 cup Chicken or vegetable broth

Directions

Step 1

Peel the potatoes and cut them into 2-inch chunks. Place the chunks in a large pot and fill with enough water to cover the potatoes. Add a pinch of salt and bring the water to a boil over high heat.

Step 2

Reduce the heat to medium and cook the potatoes until they are fork-tender, about 15-20 minutes. Drain the potatoes and set them aside in a large mixing bowl.

Step 3

While the potatoes are cooking, finely dice the onion and celery. In a large skillet, melt 4 tablespoons of butter over medium heat. Add the onion and celery to the skillet and sauté until they are softened and translucent, about 7-10 minutes.

Add the salt, black pepper, dried sage, and dried thyme to the onion-celery mixture. Stir to combine and continue cooking for 1 minute to bloom the spices.
