  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons fresh cilantro
  • 2 tablespoons vegetable oil
  • 1 medium onion
  • 2 garlic cloves
  • 8 small flour tortillas

Directions

Step 1

Peel and dice the potatoes into small cubes.

Step 2

Place the diced potatoes in a pot and cover with water. Add a pinch of salt.

Step 3

Bring the pot to a boil over medium-high heat, then reduce the heat and simmer until potatoes are tender, about 15 minutes.

Step 4

Drain the potatoes and return to the pot. Mash them until smooth.

Step 5

Stir in 1 teaspoon of salt, ground black pepper, ground cumin, and chili powder.

Step 6

Chop the cilantro finely and mix it into the mashed potatoes.

Step 7

In a skillet, heat 2 tablespoons of vegetable oil over medium heat.

Step 8

Dice the onion and mince the garlic cloves.

Step 9

Add the diced onion to the skillet and sauté until translucent, about 5 minutes.

Step 10

Add minced garlic and sauté for an additional 1 minute.

Step 11

Combine the sautéed onions and garlic with the mashed potatoes, mixing well.

Step 12

Preheat a non-stick pan or griddle over medium heat.

Step 13

Place a tortilla on the pan and spread approximately 1/4 cup of the potato mixture over one half of the tortilla.

Step 14

Fold the tortilla over the filling to create a half-moon shape.

Step 15

Cook the tortilla for 2-3 minutes on each side, or until golden and crispy.

Step 16

Repeat with the remaining tortillas and filling.

Step 17

Serve the stuffed tortillas warm, garnished with extra cilantro if desired.
