  • 4 large caps Portobello mushrooms
  • 2 medium Russet potatoes
  • 2 tablespoons Butter
  • 1 cup Milk
  • 1 cup Shredded cheddar cheese

Directions

Step 1

Preheat the oven to 375°F (190°C).

Clean the portobello mushroom caps by gently wiping them with a damp paper towel and remove the stems. Use a spoon to scrape out the gills to create more room for the stuffing.

Peel the potatoes and cut them into small chunks for quicker cooking. Place them in a pot of salted water and bring to a boil. Cook for 12-15 minutes, or until fork-tender.
