Ingredients

  • 4 pieces Large onions
  • 3 medium Potatoes
  • 2 tablespoons Butter
  • 3 tablespoons Milk
  • 0.5 cup Cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Chopped fresh parsley
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the onions and peel off the outer layers, keeping the onions intact. Cut a small slice off the bottom to create a flat base so they can stand upright.

Step 3

Hollow out the center of each onion using a spoon, leaving about 2-3 layers of onion to form a sturdy shell. Reserve the removed onion centers for another recipe or discard.

Step 4

Brush the onions with olive oil and place them in a baking dish. Bake the onions for 25 minutes, or until they are slightly tender.

Step 5

While the onions are baking, peel and dice the potatoes into chunks. Place the potatoes in a pot of salted water and bring to a boil. Cook for 15-20 minutes, or until fork-tender.

Drain the potatoes and mash them in a bowl. Add butter, milk, salt, black pepper, garlic powder, and half of the cheddar cheese to the mashed potatoes. Mix until well combined and creamy.
