  • 6 medium potatoes
  • 3 medium carrots
  • 2 stalks celery stalks
  • 1 large onion

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes. Set aside.

Peel the carrots and slice them into rounds. Dice the celery stalks. Finely chop the onion, and mince the garlic cloves.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
