Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 0.5 cup sour cream
  • 2 stalks green onions, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the potatoes thoroughly and pat them dry.

Step 3

Pierce each potato several times with a fork and rub them with 1 tablespoon of olive oil. Sprinkle them with a pinch of salt.

Step 4

Bake the potatoes directly on the oven rack for 45 minutes or until they are tender when pierced with a knife.

Step 5

Remove the potatoes from the oven and let them cool until they are safe to handle (about 10 minutes).

Step 6

Cut each potato in half lengthwise and scoop out most of the flesh, leaving about 1/4-inch of potato attached to the skin. Reserve the scooped-out potato flesh for another use, such as mashed potatoes.

Brush the inside and outside of each potato skin with the remaining 1 tablespoon of olive oil. Sprinkle with salt and pepper.

Place the potato skins on a baking sheet, skin-side down, and bake in the oven for 10 minutes until they start to crisp up.
