Ingredients

  • 4 large Russet potatoes
  • 1 cup Cheddar cheese, shredded
  • 4 slices Cooked bacon, crumbled
  • 3 tablespoons Butter, melted
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cup Sour cream
  • 2 tablespoons Green onions, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes clean and pat them dry. Pierce each potato with a fork a few times to allow steam to escape during baking.

Step 3

Bake the potatoes directly on the oven rack for 40-45 minutes or until they are tender when pierced with a fork.

Step 4

Remove the potatoes from the oven and allow them to cool for about 10 minutes, or until they're safe to handle.

Step 5

Cut each potato in half lengthwise, then carefully scoop out the flesh, leaving about 1/4-inch of potato attached to the skin. Reserve the scooped-out potato for another use (like mashed potatoes).

Step 6

Place the potato skins on a baking sheet, skin side down. Brush the insides of the skins with melted butter and sprinkle lightly with salt and black pepper.

Step 7

Return the potato skins to the oven and bake at 400°F (200°C) for 5-7 minutes, or until they begin to crisp up.

Step 8

Remove the skins from the oven and evenly distribute the shredded cheddar cheese and crumbled bacon over the insides of the skins.

Step 9

Place the potato skins back in the oven and bake for an additional 5-7 minutes, or until the cheese is fully melted and bubbly.

Step 10

Take the potato skins out of the oven. Top each one with a dollop of sour cream and a sprinkle of chopped green onions before serving.

Step 11

Serve hot and enjoy your homemade TGI Friday's style potato skins!
