Ingredients

  • 6 medium Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups Shredded cheddar cheese
  • 6 slices Cooked bacon, crumbled
  • 3 tablespoons Green onions, chopped
  • 1 cup Sour cream
  • 2 tablespoons Butter, melted

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes thoroughly. Pat them dry with a towel.

Step 3

Pierce each potato a few times with a fork and place them on a baking sheet. Bake in the preheated oven for 40-50 minutes, or until the potatoes are tender and cooked through. Remove them from the oven and let them cool until safe to handle.

Step 4

Once the potatoes are cool enough, slice each one lengthwise in half. Using a spoon, carefully scoop out most of the potato flesh, leaving about 1/4 inch of potato on the skin. Reserve the scooped-out potato for another use (mashed potatoes, perhaps!).

Preheat the oven again, this time to 450°F (230°C). Place the potato halves on a baking sheet and brush the insides with melted butter. Sprinkle them lightly with salt and pepper.

Remove the potato skins from the oven. Evenly distribute the shredded cheddar cheese and crumbled bacon among the potato halves. Return them to the oven for another 5-7 minutes, or until the cheese is fully melted and bubbling.

Take the potato skins out of the oven and sprinkle them with chopped green onions.
