Ingredients

  • 6 pieces Small russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Cooked bacon, crumbled
  • 2 tablespoons Green onions, thinly sliced
  • 0.5 cup Sour cream
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Wash and scrub the potatoes thoroughly and pat them dry. Pierce each potato a few times with a fork.

Step 3

Rub the potatoes with olive oil and sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Place them on the prepared baking sheet.

Step 4

Bake the potatoes in the preheated oven for 30-35 minutes, or until they are tender when pierced with a knife. Remove them from the oven and let them cool for 10 minutes until they can be handled.

Step 5

Cut each potato in half lengthwise and carefully scoop out most of the flesh, leaving a thin layer of potato inside the skin. Reserve the scooped-out potato flesh for another use (e.g., mashed potatoes).

Brush the inside of each potato skin with a little more olive oil, then sprinkle with the remaining salt, black pepper, and garlic powder.
