Ingredients

  • 4 medium russet potatoes
  • 12 ounces smoked sausage
  • 1 large yellow onion
  • 2 medium carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 bay leaf

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Set aside in a bowl of cold water to prevent discoloration.

Step 2

Slice the smoked sausage into 1/4-inch rounds and set aside.

Step 3

Dice the onion, slice the carrots and celery, and mince the garlic cloves.

Step 4

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage slices and cook until browned, about 5 minutes. Remove and set aside on a plate.

In the same pot, melt the butter. Add the onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

Stir in the minced garlic and cook until fragrant, about 1 minute.
