Ingredients

  • 4 medium Russet potatoes
  • 1 pound Ground pork
  • 1 medium, finely chopped Onion
  • 2 minced Garlic cloves
  • 1.5 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Paprika
  • 0.5 teaspoon Dried thyme
  • 1 large Egg
  • 0.5 cup Breadcrumbs
  • 2 tablespoons Vegetable oil
  • 4 cups Water
  • 1 pack Sausage casing (optional)

Directions

Step 1

Peel and cube the potatoes. Place them in a pot with 4 cups of water and a pinch of salt, then bring to a boil. Cook until tender, about 15-20 minutes, and drain.

Step 2

Mash the potatoes until smooth and let them cool slightly.

Step 3

In a mixing bowl, combine the ground pork, mashed potatoes, chopped onion, garlic, salt, pepper, paprika, and thyme. Mix thoroughly to incorporate.

Step 4

Add the egg and breadcrumbs to the mixture, and mix until it reaches a consistency that can be easily shaped.

Step 5

If using sausage casing, rinse the casing according to the package instructions. Stuff the mixture into the casing using a sausage stuffer, twisting them into 6-inch links. If not using casing, shape the mixture into small logs or patties by hand.

Step 6

Heat the vegetable oil in a large skillet over medium heat. Add the sausages and cook, turning occasionally, until browned on all sides, about 10-12 minutes.

Step 7

If desired, transfer the browned sausages to a preheated 350°F (175°C) oven and bake for 10 minutes to ensure they are fully cooked.

Step 8

Serve warm with your choice of mustard, sauerkraut, or another side dish.
