Ingredients

  • 2 large russet potatoes
  • 15 ounces canned salmon
  • 1 piece large egg
  • 2 stalks green onion
  • 2 tablespoons parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup panko breadcrumbs
  • 3 tablespoons olive oil

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes.

Place the potatoes into a pot of salted water. Bring to a boil and cook for 10-12 minutes or until the potatoes are tender. Drain and mash them until smooth. Let the mashed potatoes cool to room temperature.
