Ingredients

  • 500 grams Baby potatoes
  • 2 medium Green apple
  • 1 small Red onion
  • 2 medium Celery stalks
  • 4 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and scrub the baby potatoes, then place them in a large pot. Cover with cold water and add a pinch of salt.

Bring the water to a boil over medium-high heat. Reduce the heat and simmer for 12-15 minutes, or until the potatoes are fork-tender. Drain and set aside to cool slightly.
