Ingredients

  • 2 pounds Yukon gold potatoes
  • 2 teaspoons Salt
  • 1 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon White vinegar
  • 2 Celery stalks
  • 1 small Red onion
  • 3 Hard-boiled eggs
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoons Black pepper
  • 0.25 cup Sweet pickles

Directions

Step 1

Scrub and peel the potatoes, then cut them into 1-inch cubes.

Place the potato cubes in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Bring the pot to a boil over medium-high heat, then reduce the heat and simmer for about 10-12 minutes, or until the potatoes are fork-tender.
