Peel the potatoes and chop them into small cubes. Rinse under cold water to remove excess starch.
Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
Add asafoetida, sliced green chilies, and curry leaves. Sauté for a few seconds until fragrant.
Add the cubed potatoes to the pan and stir well to coat them with the spices.
Add turmeric powder, red chili powder, and salt. Mix well.
Cover the pan with a lid and let the potatoes cook for about 10-12 minutes on low heat. Stir occasionally to prevent sticking and ensure even cooking.
Once the potatoes are tender, add coriander powder and mix well.
Increase the heat to medium-high and sauté for another 5 minutes, uncovered, to slightly crisp up the potatoes.
