Preheat your oven to 200°C (400°F) and grease a medium-sized baking dish with olive oil.
Peel and thinly slice the potatoes and pumpkin into uniform pieces, about 5mm thick, for even cooking.
Cut the cooked ham into small bite-sized cubes and set aside.
In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continually for 1-2 minutes to create a roux.
