Ingredients

  • 4 medium Potatoes (Russet or Yukon Gold)
  • 2 tablespoons Butter
  • 1 cup Parmesan cheese, grated
  • 2 large Eggs
  • 1 cup All-purpose flour
  • 0.5 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 3 cups Vegetable oil (for frying)
  • 2 tablespoons Chopped parsley (for garnish, optional)

Directions

Step 1

Peel the potatoes and cut them into large chunks. Place them in a pot of salted water and boil until tender, about 15-20 minutes. Drain and let them cool slightly.

Step 2

Mash the potatoes until smooth. Stir in the butter, Parmesan cheese, salt, pepper, and garlic powder. Mix well and let the mixture cool completely.

Step 3

Once cooled, stir in the eggs, one at a time, until fully incorporated. Then add the milk and flour, mixing until you get a smooth, sticky dough.

Step 4

Heat the vegetable oil in a deep skillet or medium saucepan over medium heat until it reaches 350°F (175°C).

Step 5

Using two spoons, shape small portions of the potato mixture into rough balls or ovals, about 1 tablespoon each. Carefully drop them into the hot oil, working in batches to avoid overcrowding the pan.

Step 6

Fry the potato puffs for 3-4 minutes, turning occasionally, until they are golden brown and crispy on all sides. Use a slotted spoon to remove them from the oil and transfer to a paper towel-lined plate to drain excess oil.

Step 7

Repeat with the remaining potato mixture, ensuring the oil returns to temperature between batches.

Step 8

Garnish with parsley if desired, and serve the potato puffs warm with your favorite dipping sauce or as is.
