Ingredients

  • 3 cups All-purpose flour
  • 1 cup Mashed potatoes (plain, smooth, and cooled)
  • 0.5 cup Milk
  • 0.25 cup Unsalted butter
  • 1 large Egg
  • 2.25 teaspoons Active dry yeast
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 0.25 cup Warm water (about 110°F/43°C)
  • 1 large Egg (for egg wash)
  • 1 tablespoon Water (for egg wash)

Directions

Step 1

In a small bowl, combine the warm water and sugar. Sprinkle the active dry yeast over the top and let it sit for 5-10 minutes until foamy.

Step 2

In a microwave-safe bowl or small saucepan, heat the milk and butter together just until the butter is melted. Allow to cool slightly until warm but not hot.

Step 3

In a large mixing bowl, whisk together the mashed potatoes, egg, and salt. Add the milk and butter mixture and stir to combine.

Step 4

Add the foamy yeast mixture to the bowl and stir well.

Step 5

Gradually add the flour, 1 cup at a time, mixing after each addition. Once the dough becomes too thick to stir, transfer it to a floured surface and knead for about 8-10 minutes, adding flour as needed, until the dough is smooth and elastic.

Step 6

Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm place for 1-1.5 hours, or until doubled in size.

Step 7

Punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball and place them on a parchment-lined baking sheet, spaced about 2 inches apart.

Step 8

Cover the shaped buns with a kitchen towel and let them rise again for 30-40 minutes, until puffy and nearly doubled in size.

Step 9

While the buns are rising, preheat your oven to 375°F (190°C).

Step 10

In a small bowl, whisk together the egg and water for the egg wash. Brush the tops of the buns with the egg wash for a golden finish.

Step 11

Bake the buns in the preheated oven for 18-20 minutes, or until golden brown on top.

Step 12

Remove the buns from the oven and let cool slightly before serving.
