  • 500 grams Russet potatoes
  • 200 grams All-purpose flour
  • 50 grams Semolina
  • 1 large Egg
  • 0.5 teaspoons Salt
  • 10 Plums (small, ripe)
  • 10 teaspoons Granulated sugar
  • 50 grams Butter
  • 100 grams Breadcrumbs
  • 0.5 teaspoons Ground cinnamon (optional)
  • 2 tablespoons Powdered sugar (for garnish)

Directions

Step 1

Peel and boil the potatoes in salted water until tender, about 15 minutes. Drain and allow them to cool slightly before mashing or ricing them into a smooth consistency. Let the mashed potatoes cool to room temperature.

Step 2

In a large bowl, combine the cooled mashed potatoes, flour, semolina, egg, and salt. Mix until a smooth dough forms. If the dough is too sticky, add a little more flour, a tablespoon at a time, until manageable.
