Ingredients

  • 9 pieces Lasagna noodles
  • 5 medium Potatoes
  • 4 tablespoons Butter
  • 0.5 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Yellow onion
  • 2 cups Cheddar cheese, shredded
  • 1 cup Sour cream
  • 1 tablespoon Vegetable oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Peel and dice the potatoes. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15 minutes. Drain the potatoes and mash them with butter, milk, salt, and pepper. Set aside.

Step 3

Cook the lasagna noodles according to the package instructions until al dente. Drain and lay them flat on a baking sheet to prevent sticking.

Step 4

Dice the onion finely. Heat the vegetable oil in a skillet over medium heat, add the onion, and sauté until golden brown, about 5-7 minutes.

Step 5

To assemble, spread a thin layer of mashed potatoes on the bottom of the prepared baking dish. Lay 3 lasagna noodles evenly on top. Spread 1/3 of the mashed potatoes over the noodles, followed by a layer of sautéed onions, 1/2 cup of shredded cheese, and 1/4 cup of sour cream. Repeat layering two more times, ending with a final layer of mashed potatoes and topping with the remaining cheese.

Step 6

Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is melted and bubbly.

Step 7

Let the lasagna rest for 10 minutes before slicing. Serve warm with a dollop of sour cream if desired.
