Ingredients

  • 4 medium (about 1.5 lbs) Russet potatoes
  • 3 tablespoons Unsalted butter
  • 1 medium, diced Yellow onion
  • 3 cloves, minced Garlic
  • 4 cups Chicken or vegetable broth
  • 2 cups Whole milk
  • 0.5 cups Heavy cream
  • 2 cups, shredded Pepper Jack cheese
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon (or to taste) Black pepper
  • 0.5 teaspoon Smoked paprika
  • 2 stalks, chopped (for garnish) Green onions
  • 0.5 cups (optional garnish) Crumbled bacon

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Set aside.

Step 2

In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 3-4 minutes, until softened and translucent.

Step 3

Add the minced garlic to the pot and sauté for another minute, stirring often to avoid burning.

Step 4

Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 5

Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a standard blender, blend until smooth, and return it to the pot.

Step 6

Turn the heat to low and stir in the milk, heavy cream, shredded Pepper Jack cheese, salt, black pepper, and smoked paprika. Stir constantly until the cheese is melted and the soup is creamy.

Step 7

Taste and adjust seasoning with additional salt and pepper if needed.

Step 8

Ladle the soup into bowls and garnish with chopped green onions and crumbled bacon if desired. Serve warm with crusty bread or crackers.
