Ingredients

  • 4 medium Russet potatoes
  • 1 small Yellow onion
  • 2 Eggs
  • 4 tablespoons All-purpose flour
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 0.5 cups Vegetable oil
  • 4 medium Apples
  • 0.25 cups Water
  • 2 tablespoons Sugar
  • 0.5 teaspoons Ground cinnamon

Directions

Step 1

Peel the potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel and wring out as much liquid as possible.

Step 2

Grate the onion and add it to the potatoes in a large bowl.

Step 3

In a small bowl, lightly beat the eggs. Add the eggs, flour, salt, and black pepper to the potato and onion mixture. Stir until well combined.

Step 4

Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot, scoop about 2 tablespoons of the potato mixture into the skillet for each pancake. Flatten gently with the back of a spoon.

Step 5

Cook each pancake for 3-4 minutes on each side, or until golden brown and crispy. Transfer the cooked pancakes to a plate lined with paper towels to drain any excess oil. Repeat with the remaining potato mixture.

Step 6

To make the applesauce, peel, core, and cut the apples into small chunks.

Step 7

In a medium saucepan, combine the apples, water, sugar, and cinnamon. Cover and cook over medium heat for 15-20 minutes, stirring occasionally, until the apples are soft.

Step 8

Mash the cooked apples with a fork or potato masher for a chunky applesauce, or puree them with a blender for a smoother texture.

Step 9

Serve the warm potato pancakes with a generous dollop of homemade applesauce.
