Peel and boil the potatoes in salted water until soft (roughly 20 minutes). Drain the water and mash the potatoes until smooth. Let them cool to room temperature.
Warm the milk slightly (not too hot) and mix it with the sugar and dry yeast. Let it sit for 10 minutes until the yeast activates and becomes frothy.
In a large mixing bowl, combine the mashed potatoes, flour, salt, cooled melted butter, egg, and the activated yeast mixture. Knead the mixture into a soft, elastic dough for about 8-10 minutes.
Cover the dough with a clean kitchen towel and let it rise in a warm place for 1 hour, or until it has doubled in size.
Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
After the dough has risen, punch it down and divide it into 10 equal portions. Shape each portion into a ball and arrange them on the prepared baking tray, leaving enough space for them to expand.
Cover the shaped buns with a towel and let them rise again for 20 minutes.
Bake the buns in the preheated oven for 20-25 minutes, or until they are golden brown on top.
While the buns are baking, prepare the garlic-dill glaze. Finely mince the garlic and chop the dill. Mix them with sunflower oil and a couple of tablespoons of water in a small bowl.
As soon as the buns come out of the oven, generously brush them with the garlic-dill glaze while still warm.
Let the Pampushki cool slightly, then serve warm as a side dish or snack.
