  • 4 pieces pork chops
  • 4 medium russet potatoes
  • 2 large yellow onion
  • 2 pieces garlic cloves
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons parsley (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Peel and slice the potatoes into thin rounds, about 1/8-inch thick. Set aside in cold water to prevent browning.

Slice the onions into thin rings. Mince the garlic cloves.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, for 8-10 minutes until they are soft and caramelized. Add the minced garlic and cook for another 1 minute. Remove from the skillet and set aside.

Place the seared pork chops over the potato-onion layers. Pour the creamy sauce evenly over the top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.

Remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the pork chops are fully cooked with an internal temperature of 145°F (63°C).
