Directions

Step 1

Peel and dice the potatoes into small cubes, approximately 1/2 inch in size.

Bring 2 cups of water to a boil in a medium saucepan. Add the diced potatoes and a pinch of salt, and simmer them for about 8-10 minutes until they are tender but not falling apart. Drain and set aside.
