Ingredients

  • 3 medium Russet potatoes
  • 1 cup Rolled oats
  • 0.5 cup All-purpose flour
  • 2 tablespoons Butter
  • 0.25 cup Milk
  • 1 large Egg
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Chives (optional)
  • 2 tablespoons Olive oil

Directions

Step 1

Peel the potatoes and cut them into large chunks.

Step 2

Boil the potato chunks in a pot of salted water for 12-15 minutes, or until they are fork-tender.

Step 3

Drain the potatoes and mash them until smooth.

Step 4

In a large mixing bowl, combine the mashed potatoes, rolled oats, flour, butter, milk, and egg. Mix well to form a thick batter.

Step 5

Stir in the salt, black pepper, garlic powder, and chives (if using) until evenly distributed.

Step 6

Preheat a large non-stick skillet over medium heat and add the olive oil.

Step 7

Scoop the batter into the skillet to form small patties, about 3 inches in diameter. Flatten gently with a spatula.

Step 8

Cook each potato oat cake for 3-4 minutes per side, or until golden brown and crispy on the outside.

Step 9

Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.

Step 10

Serve warm as a side dish or enjoy with your favorite dipping sauce.
