Ingredients

  • 2 medium Russet potatoes
  • 250 grams Salmon fillets (cooked and flaked)
  • 1 large Egg
  • 100 grams Breadcrumbs
  • 2 stalks Green onions (finely chopped)
  • 2 tablespoons Fresh parsley (finely chopped)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Lemon zest
  • 2 tablespoons Olive oil

Directions

Step 1

Peel the potatoes, cut them into chunks, and boil them in salted water until fork-tender, about 10-12 minutes. Drain and allow them to cool slightly.

Step 2

In a large mixing bowl, mash the potatoes until smooth. Add the flaked salmon, egg, 50 grams of breadcrumbs, green onions, parsley, garlic powder, salt, black pepper, and lemon zest.

Mix everything together until well combined. The mixture should hold its shape when pressed together. If it is too wet, add a bit more breadcrumbs.

Divide the mixture into 8 equal portions and shape each into a patty about 2 cm thick.
