Ingredients

  • 400 grams Potatoes
  • 50 grams Butter
  • 2 large Eggs
  • 120 milliliters Milk
  • 100 grams Cheddar cheese
  • 150 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chives
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 200°C (400°F) and lightly grease a 12-cup muffin tin with olive oil or line it with paper muffin liners.

Step 2

Peel and chop the potatoes into small chunks. Boil them in a pot of salted water for 10-15 minutes, or until fork-tender.

Step 3

Drain the cooked potatoes and mash them with the butter until smooth. Set aside to cool slightly.

In a large bowl, whisk the eggs and milk together until combined. Stir in the mashed potatoes until well incorporated.
