Ingredients

  • 4 medium potatoes
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 10 curry leaves
  • 1 medium, finely chopped onion
  • 2 small, slit lengthwise green chili
  • 1 inch piece, finely grated ginger
  • 1 teaspoon turmeric powder
  • 1 teaspoon, or to taste salt
  • 1 tablespoon lemon juice
  • 2 tablespoons, chopped fresh coriander leaves

Directions

Step 1

Peel the potatoes and cut them into medium-sized cubes.

Step 2

Boil the potato cubes in water until they are tender but not mushy, about 10 minutes. Drain and set aside.

Step 3

Heat the vegetable oil in a large pan over medium heat.

Step 4

Add the mustard seeds and cumin seeds. Let them splutter for about 30 seconds.

Step 5

Add the curry leaves and sauté for another 30 seconds until fragrant.

Step 6

Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.

Step 7

Add the slit green chilies and grated ginger. Sauté for another 1-2 minutes until the raw smell disappears.

Step 8

Stir in the turmeric powder and mix well with the onion mixture.

Step 9

Add the boiled potato cubes to the pan, and gently mix until the potatoes are well coated with the spices.

Season with salt and pour the lemon juice over the mixture. Mix gently to combine.

Cook for another 3-4 minutes, allowing the flavors to meld together.
